Ingredients

  • 4 medium zucchinis
  • 1 cup cooked quinoa
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped onions
  • 1/4 cup shredded cheese
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut zucchinis in half lengthwise and scoop out the centers.
  3. Heat olive oil in a pan and sauté onions until soft.
  4. Mix cooked quinoa, tomatoes, onions, garlic powder, salt, and pepper.
  5. Fill zucchini boats with the quinoa mixture.
  6. Sprinkle cheese on top.
