Ingredients

- 4 medium zucchinis
- 1 cup cooked quinoa
- 1/2 cup diced tomatoes
- 1/4 cup chopped onions
- 1/4 cup shredded cheese
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Cut zucchinis in half lengthwise and scoop out the centers.
- Heat olive oil in a pan and sauté onions until soft.
- Mix cooked quinoa, tomatoes, onions, garlic powder, salt, and pepper.
- Fill zucchini boats with the quinoa mixture.
- Sprinkle cheese on top.
- Bake for 20-25 minutes until zucchinis are tender.
