- 4 large portobello mushrooms
- 1 cup cooked quinoa
- 1/2 cup diced bell peppers
- 1/4 cup diced onions
- 1 clove garlic, minced
- 1 tbsp olive oil
- 1/4 cup shredded cheese (optional)
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F.
- Clean mushrooms and remove stems.
- Heat olive oil in a pan and sauté onions, garlic, and bell peppers.
- Mix cooked quinoa with sautéed vegetables.
- Stuff mushroom caps with the quinoa mixture.
- Sprinkle cheese on top (optional).
- Bake for 20 minutes.
- Serve warm.
