Description

Ingredients

  • 4 large portobello mushrooms
  • 1 cup cooked quinoa
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • 1/4 cup shredded cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.
  2. Clean mushrooms and remove stems.
  3. Heat olive oil in a pan and sauté onions, garlic, and bell peppers.
  4. Mix cooked quinoa with sautéed vegetables.
  5. Stuff mushroom caps with the quinoa mixture.
