A simple and nutritious quinoa pilaf with fresh herbs, perfect as a side dish or light meal.
Ingredients

- 1 cup quinoa
- 2 cups water or vegetable broth
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water and drain.
- Heat olive oil in a pot over medium heat. Add onion and garlic, sauté until soft.
- Add quinoa and stir for 1 minute.
- Pour in water or broth, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
- Remove from heat, let sit covered for 5 minutes.
- Fluff quinoa with a fork, then mix in parsley, cilantro, lemon juice, salt, and pepper.
Notes
- Use vegetable broth for extra flavor.
- Add toasted nuts or dried fruit for texture.
- Store leftovers in the fridge for up to 3 days.
