Description

A simple and nutritious quinoa pilaf with fresh herbs, perfect as a side dish or light meal.


Ingredients

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water and drain.
  2. Heat olive oil in a pot over medium heat. Add onion and garlic, sauté until soft.
  3. Add quinoa and stir for 1 minute.
  4. Pour in water or broth, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  5. Remove from heat, let sit covered for 5 minutes.
  6. Fluff quinoa with a fork, then mix in parsley, cilantro, lemon juice, salt, and pepper.
