Ingredients

- 1 cup cooked quinoa
- 2 eggs
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add onions and bell peppers, sauté for 2 minutes.
- Add cooked quinoa and stir for 1 minute.
- Crack eggs into the pan and scramble with quinoa and vegetables.
- Cook until eggs are fully set, season with salt and pepper.
- Serve hot.
