Description

Ingredients
3–4 carrots, shredded
1/2 cup hot water
3/4 cup rice vinegar
3 tablespoons sugar
2 teaspoons salt
Instructions
1. Combine water, vinegar, sugar, and salt in a mason jar. Seal and shake well.
2. Add shredded carrots to the jar and press down to submerge.
3. Let marinate for 1 hour at room temperature or refrigerate overnight.
Notes
Store in fridge for up to 3 weeks.
Add garlic or chili flakes for extra flavor.
