Ingredients

- 3 cups rolled oats
- 1 cup pumpkin puree
- 1/2 cup maple syrup
- 1/4 cup coconut oil
- 1 tsp vanilla extract
- 2 tsp pumpkin spice
- 1/2 tsp salt
- 1/2 cup chopped pecans
- 1/4 cup pumpkin seeds
Instructions
- Preheat oven to 325°F (165°C).
- Mix oats, pecans, and pumpkin seeds in a large bowl.
- Whisk pumpkin puree, maple syrup, coconut oil, vanilla, pumpkin spice, and salt in another bowl.
- Pour wet ingredients over dry ingredients and stir until evenly coated.
- Spread mixture on a baking sheet lined with parchment paper.
- Bake for 30-35 minutes, stirring halfway, until golden brown.
- Let cool completely before storing.
Notes
- Store in an airtight container for up to 2 weeks.
- Add dried fruit after baking if desired.
