Ingredients

- 1 lb ground turkey
- 2 medium sweet potatoes, diced
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup spinach, chopped
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and cook until softened (3 minutes).
- Add garlic and cook for 30 seconds.
- Add ground turkey, breaking it apart with a spoon. Cook until browned (5-6 minutes).
- Stir in sweet potatoes, paprika, cumin, salt, and pepper.
- Cover and cook for 10 minutes, stirring occasionally.
- Add spinach and cook until wilted (2 minutes).
- Serve hot.
Notes
- Swap sweet potatoes for butternut squash if preferred.
- Add chili flakes for extra heat.
- Store leftovers in an airtight container for up to 3 days.
