Ingredients

  • 1 lb ground turkey
  • 2 medium sweet potatoes, diced
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup spinach, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and cook until softened (3 minutes).
  3. Add garlic and cook for 30 seconds.
  4. Add ground turkey, breaking it apart with a spoon. Cook until browned (5-6 minutes).
  5. Stir in sweet potatoes, paprika, cumin, salt, and pepper.
  6. Cover and cook for 10 minutes, stirring occasionally.
  7. Add spinach and cook until wilted (2 minutes).
  8. Serve hot.

Notes

  • Swap sweet potatoes for butternut squash if preferred.
  • Add chili flakes for extra heat.
