- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 1 cup finely chopped apples
- Red food coloring (as needed)
- 1/2 cup raspberry jam (for filling)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, beat butter and sugar until light and fluffy.
- Add eggs one at a time, then mix in vanilla extract.
- Alternate adding the dry ingredients and buttermilk to the butter mixture, mixing until just combined.
- Fold in chopped apples and a few drops of red food coloring.
- Fill cupcake liners halfway, add a spoonful of raspberry jam, then top with more batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Use Granny Smith apples for a tart flavor.
- Adjust food coloring to achieve a deep red hue.
