Description

Moist, flavorful pistachio nut bread made with pudding mix, topped with glaze and chopped nuts—perfect for brunch or gifting.


Ingredients

1/2 cup white sugar

2 Tablespoons cinnamon

1 yellow cake mix

2 (3.5 ounce) boxes of instant pistachio pudding mix

4 eggs

1/4 cup vegetable oil

1/8 cup water

1 cup sour cream

1 teaspoon green food coloring (optional)

1 teaspoon vanilla extract

1 teaspoon almond extract

3 Tablespoons milk

1 1/2 cups powdered sugar

1/2 cup chopped pistachios


Instructions

1. Preheat oven to 350°F. Grease a loaf pan.

2. In a small bowl, mix cinnamon and sugar; set aside.

3. In a large bowl, mix cake mix, pudding mix, eggs, oil, water, sour cream, extracts, and food coloring.

4. Pour half the batter into the loaf pan, sprinkle with cinnamon-sugar.

5. Add remaining batter and more cinnamon-sugar on top.

6. Bake 45–55 minutes until a toothpick comes out clean.

7. Whisk milk, powdered sugar, and vanilla to make glaze.

8. Drizzle glaze over cooled loaf and sprinkle with pistachios.

Notes

For muffins, bake 20–25 mins. Loaf freezes well wrapped tightly.
