These pink lemonade cookies are soft, zesty, and full of summer cheer—made with real lemon zest and pink lemonade mix for a colorful twist.
Ingredients
1 cup unsalted butter, softened
1 cup granulated sugar
1 cup powdered sugar
1 large egg
2 tablespoons lemon juice
1 teaspoon lemon zest
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup pink lemonade drink mix (powdered)
1/4 cup white chocolate chips (optional)
Additional powdered sugar for dusting
Instructions
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment.
2. Cream butter, granulated sugar, and powdered sugar until light and fluffy.
3. Add egg, lemon juice, and zest; mix until combined.
4. Whisk flour, baking powder, baking soda, salt, and pink lemonade mix in a separate bowl.
5. Gradually add dry mix to wet ingredients, stir until fully incorporated. Fold in white chocolate chips if using.
6. Scoop dough into balls, place on baking sheets, flatten slightly with glass.
7. Bake for 10–12 minutes, until edges are lightly golden.
8. Cool on sheets 5 minutes, transfer to wire rack, then dust with powdered sugar.
Notes
Use fresh lemon zest for the most vibrant flavor.
White chocolate chips add creamy balance, but can be skipped.
Store in an airtight container up to 5 days or freeze the dough for later.
