Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 tsp peppermint extract
  • 1/2 cup powdered sugar (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk flour, cocoa powder, baking powder, and salt.
  3. In another bowl, mix granulated sugar, brown sugar, oil, eggs, and peppermint extract.
  4. Combine wet and dry ingredients until just mixed.
  5. Chill dough for 30 minutes.
  6. Scoop dough, roll into balls, then coat in powdered sugar.
  7. Place on baking sheet, spacing 2 inches apart.
  8. Bake for 10-12 minutes.
  9. Let cool for 5 minutes before transferring to a rack.
