Description
A crispy, handheld version of your favorite summer dessert. These Peach Cobbler Egg Rolls feature spiced peaches wrapped in golden egg roll wrappers, perfect with a vanilla bean glaze.
Ingredients
2 cups chopped peaches
1 tbsp lemon juice
2 tbsp butter
½ cup light brown sugar
4 tsp cornstarch
½ tsp cinnamon
½ tsp vanilla extract
10 egg roll wrappers
2 tbsp water (for sealing)
Vegetable oil (for frying)
Powdered sugar (optional)
For Vanilla Bean Dipping Sauce:
¾ cup powdered sugar
½ tsp vanilla bean paste or extract
2–3 tbsp milk
Pinch of salt
Instructions
1. In a saucepan, combine peaches, lemon juice, butter, brown sugar, cornstarch, and cinnamon. Simmer for 10 minutes until thickened.
2. Stir in vanilla extract and cool the mixture.
3. Place egg roll wrapper in diamond shape. Spoon 2 tbsp of filling, fold and roll tightly, sealing edges with water.
4. Heat oil to 350°F. Fry egg rolls in batches for 5–6 minutes until golden.
5. Drain on a rack and dust with powdered sugar.
6. Whisk dipping sauce ingredients until smooth and serve with egg rolls.
Notes
You can make and freeze the egg rolls before frying. Bake or air fry for a lighter version.
