- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 bell pepper, diced
- 1 zucchini, sliced
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup frozen peas
- 1 cup chopped potatoes
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5 minutes.
- Stir in garlic, bell pepper, and zucchini. Cook for 3 minutes.
- Add diced tomatoes, vegetable broth, thyme, paprika, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Add frozen peas and potatoes. Cook for another 10 minutes.
- Adjust seasoning if needed. Serve hot.
