Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 bell pepper, diced
  • 1 zucchini, sliced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup frozen peas
  • 1 cup chopped potatoes

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes.
  3. Stir in garlic, bell pepper, and zucchini. Cook for 3 minutes.
  4. Add diced tomatoes, vegetable broth, thyme, paprika, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Add frozen peas and potatoes. Cook for another 10 minutes.
  7. Adjust seasoning if needed. Serve hot.
