Ingredients

  • 1 lb smoked sausage, sliced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sausage and cook until browned, about 5 minutes.
  3. Add onion, bell pepper, and garlic. Cook until softened, about 3 minutes.
  4. Stir in rice, paprika, salt, and pepper.
  5. Pour in chicken broth and bring to a boil.
  6. Reduce heat to low, cover, and simmer for 20 minutes.
  7. Remove from heat and let stand for 5 minutes before serving.

Notes

  • Can substitute chicken or turkey sausage.
