Ingredients

- 1 lb smoked sausage, sliced
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sausage and cook until browned, about 5 minutes.
- Add onion, bell pepper, and garlic. Cook until softened, about 3 minutes.
- Stir in rice, paprika, salt, and pepper.
- Pour in chicken broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 20 minutes.
- Remove from heat and let stand for 5 minutes before serving.
Notes
- Can substitute chicken or turkey sausage.
- Add frozen peas or corn for extra vegetables.
- Leftovers keep well in the fridge for up to 3 days.
