Description

A simple and flavorful one-pot dish combining Mexican rice with seasoned beef.


Ingredients

  • 1 lb ground beef
  • 1 cup white rice
  • 2 cups beef broth
  • 1 can (14 oz) diced tomatoes
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, bell pepper, and garlic. Cook until softened.
  3. Add ground beef and cook until browned.
  4. Stir in rice, diced tomatoes, beef broth, cumin, chili powder, paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
  6. Remove from heat and let sit for 5 minutes before serving.

Notes

  • You can substitute ground turkey for beef.
  • Add black beans or corn for extra texture.
  • Top with fresh cilantro or shredded cheese.
