A simple and flavorful one-pot dish combining Mexican rice with seasoned beef.
Ingredients

- 1 lb ground beef
- 1 cup white rice
- 2 cups beef broth
- 1 can (14 oz) diced tomatoes
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, bell pepper, and garlic. Cook until softened.
- Add ground beef and cook until browned.
- Stir in rice, diced tomatoes, beef broth, cumin, chili powder, paprika, salt, and pepper.
- Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
- Remove from heat and let sit for 5 minutes before serving.
Notes
- You can substitute ground turkey for beef.
- Add black beans or corn for extra texture.
- Top with fresh cilantro or shredded cheese.
