A comforting and flavorful soup that combines the classic taste of lasagna in an easy one-pot recipe.


Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 oz lasagna noodles, broken into pieces
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned.
  2. Add diced onion and minced garlic, sauté until softened.
  3. Pour in crushed tomatoes and chicken broth, then stir in basil, oregano, salt, and pepper.
  4. Bring to a boil, then add broken lasagna noodles. Cook until noodles are tender.
  5. Reduce heat and stir in ricotta cheese until melted.
  6. Serve hot, topped with mozzarella, Parmesan, and fresh basil.

Notes

  • For a vegetarian version, replace ground beef with mushrooms or lentils.
