- 2 cups cooked chickpeas
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/4 tsp cinnamon
- 4 cups vegetable broth
- 1 can diced tomatoes
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion, garlic, carrot, and celery. Sauté for 5 minutes.
- Stir in cumin, coriander, turmeric, and cinnamon. Cook for 1 minute.
- Add chickpeas, diced tomatoes, and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Season with salt and pepper.
- Serve hot, garnished with fresh cilantro.

- Use canned chickpeas for convenience.
