Ingredients

  • 2 cups cooked chickpeas
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/4 tsp cinnamon
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion, garlic, carrot, and celery. Sauté for 5 minutes.
  3. Stir in cumin, coriander, turmeric, and cinnamon. Cook for 1 minute.
  4. Add chickpeas, diced tomatoes, and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Season with salt and pepper.
  7. Serve hot, garnished with fresh cilantro.
