Description

A flavorful Moroccan chicken tagine with tender meat, aromatic spices, and a rich sauce.


Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground turmeric
  • 1 tsp paprika
  • 1 cinnamon stick
  • 1 preserved lemon, chopped
  • 1 cup chicken stock
  • 1 tbsp olive oil
  • 1/4 cup green olives, pitted
  • 2 tbsp fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a tagine or deep skillet over medium heat.
  2. Season chicken thighs with salt and pepper, then brown them on both sides. Remove and set aside.
  3. In the same pot, sauté onions until softened. Add garlic and spices, cooking for 1 minute.
  4. Return chicken to the pot. Add chicken stock, preserved lemon, and cinnamon stick.
  5. Cover and simmer for 35-40 minutes until chicken is tender.
  6. Stir in olives and cilantro before serving.

Notes

  • Serve with couscous or warm bread.
  • Adjust spice levels to your preference.
  • For extra richness, add a handful of dried apricots or raisins.
