Ingredients

  • 2 eggs
  • 3/4 cup milk
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup grated carrots
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts
  • 1/2 cup shredded coconut

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, mix flours, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, whisk eggs, milk, oil, and vanilla.
  4. Combine wet and dry ingredients. Stir until just mixed.
  5. Fold in carrots, raisins, walnuts, and coconut.
  6. Spoon batter into muffin cups, filling each 3/4 full.
  7. Bake for 20-25 minutes, until a toothpick comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack.
