- 1 1/2 cups all-purpose flour
- 1/2 cup whole wheat flour
- 1 cup sugar
- 1 tbsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 2 eggs
- 3/4 cup milk
- 1/2 cup vegetable oil
- 1 tsp vanilla extract
- 1 cup grated carrots
- 1/2 cup raisins
- 1/2 cup chopped walnuts
- 1/2 cup shredded coconut
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a large bowl, mix flours, sugar, baking powder, cinnamon, and salt.
- In another bowl, whisk eggs, milk, oil, and vanilla.
- Combine wet and dry ingredients. Stir until just mixed.
- Fold in carrots, raisins, walnuts, and coconut.
- Spoon batter into muffin cups, filling each 3/4 full.
- Bake for 20-25 minutes, until a toothpick comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack.
Notes
- Store in an airtight container for up to 3 days.
- Substitute nuts or dried fruits as desired.
- For a healthier version, reduce sugar by 1/4 cup.
