Ingredients

Scale
  • 4 cups vegetable broth
  • 1 cup sliced mushrooms
  • 3 tbsp miso paste
  • 2 scallions, chopped
  • 1 clove garlic, minced
  • 1 tsp grated ginger
  • 1 tbsp soy sauce
  • 1 tsp sesame oil

Instructions

  1. Heat sesame oil in a pot over medium heat.
  2. Add garlic and ginger, sauté for 1 minute.
  3. Add mushrooms and cook for 3-4 minutes until softened.
  4. Pour in vegetable broth and bring to a simmer.
  5. Dissolve miso paste in a small amount of broth, then stir into the pot.
  6. Add soy sauce and simmer for 5 minutes.
  7. Stir in scallions and serve hot.
