Ingredients

- 4 cups vegetable broth
- 1 cup sliced mushrooms
- 3 tbsp miso paste
- 2 scallions, chopped
- 1 clove garlic, minced
- 1 tsp grated ginger
- 1 tbsp soy sauce
- 1 tsp sesame oil
Instructions
- Heat sesame oil in a pot over medium heat.
- Add garlic and ginger, sauté for 1 minute.
- Add mushrooms and cook for 3-4 minutes until softened.
- Pour in vegetable broth and bring to a simmer.
- Dissolve miso paste in a small amount of broth, then stir into the pot.
- Add soy sauce and simmer for 5 minutes.
- Stir in scallions and serve hot.
Notes
- Use any type of mushrooms you prefer.
- Adjust miso paste for stronger or milder flavor.
- Store leftovers in the fridge for up to 2 days.
