Ingredients
2 ripe peaches, sliced
4 cups mixed greens
1/2 red onion, thinly sliced
1/3 cup candied pecans
1/3 cup goat cheese, crumbled
1/4 cup raspberry vinaigrette
Salt and pepper to taste
Instructions
1. Slice the peaches and set aside. Grill if desired.
2. Lay out the mixed greens on a serving plate or bowl.
3. Add red onion slices and layer on the peaches.
4. Sprinkle goat cheese and candied pecans over the top.
5. Drizzle with raspberry vinaigrette just before serving.
6. Serve chilled or at room temperature.
