Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/2 cup kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook quinoa in water according to package instructions. Let it cool.
  2. In a large bowl, combine cucumber, cherry tomatoes, red onion, olives, feta, and parsley.
  3. Add cooled quinoa to the bowl.
  4. Drizzle with olive oil and lemon juice. Sprinkle with oregano, salt, and pepper.
  5. Toss everything gently until well combined.
  6. Serve chilled or at room temperature.
