Ingredients

- 2 large eggs
- 1 whole wheat tortilla
- 1/4 cup diced cucumber
- 1/4 cup diced tomatoes
- 2 tbsp crumbled feta cheese
- 1 tbsp chopped fresh parsley
- 1 tsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Whisk eggs, season with salt and pepper, and scramble in the pan until fully cooked.
- Warm the tortilla in a dry pan or microwave for 10 seconds.
- Spread the scrambled eggs on the tortilla.
- Top with cucumber, tomatoes, feta cheese, and parsley.
- Roll the tortilla tightly and serve immediately.

- Add olives or red onions for extra flavor.
