- 2 tbsp maple syrup
- 1 tbsp olive oil
- 1 tsp fresh thyme, chopped
- 1/4 cup pecans, toasted and chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Toss carrots with olive oil, salt, and pepper. Spread on a baking sheet.
- Roast for 20 minutes, stirring halfway.
- Drizzle maple syrup and sprinkle thyme over carrots. Roast for 5 more minutes.
- Remove from oven and top with toasted pecans before serving.
