Ingredients

  • 2 boneless, skinless chicken breasts (about 1 pound)
  • 1 tablespoon olive oil
  • 1 cup sliced mushrooms
  • 2 cloves garlic, minced
  • 1/2 cup Marsala wine
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cut chicken breasts into even slices and season with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Cook chicken for 4-5 minutes per side until golden brown. Remove and set aside.
  4. In the same skillet, sauté mushrooms and garlic until softened, about 3 minutes.
  5. Add Marsala wine and chicken broth, scraping up any browned bits.
  6. Simmer for 5 minutes to reduce slightly.
  7. Stir in heavy cream and thyme, then return chicken to the skillet.
  8. Cook for another 2-3 minutes until chicken is heated through.
  9. Garnish with fresh parsley if desired.
