Ingredients

  • 4 large russet potatoes, peeled and diced
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Melt butter in a large pot over medium heat. Add diced onion and cook until soft.
  2. Add minced garlic and cook for 1 minute until fragrant.
  3. Pour in chicken broth and add diced potatoes. Bring to a boil, then reduce heat and simmer for 15 minutes or until potatoes are tender.
  4. Use a potato masher to slightly break down some of the potatoes for a thicker texture.
  5. Stir in heavy cream, salt, and pepper. Simmer for 5 more minutes.
  6. Ladle soup into bowls and top with shredded cheese, crumbled bacon, and chopped green onions.
