Description

Soft, sweet, and snack-size! These Little Bites Muffins are made with yogurt, sprinkles, and simple pantry ingredients. Perfect for lunchboxes or parties.


Ingredients

1 cup plain yogurt

½ cup milk

½ cup mild flavored oil or melted butter

3 large eggs

2 teaspoons vanilla extract

2 cups all-purpose flour

½ cup light brown sugar

1 teaspoon baking soda

½ teaspoon salt

¼ cup sprinkles


Instructions

1. Preheat oven to 350°F and line or grease mini muffin pan.

2. Whisk together yogurt, milk, oil, eggs, and vanilla.

3. Combine flour, sugar, baking soda, and salt in a separate bowl.

4. Add dry ingredients to wet mixture and stir just until combined.

5. Gently fold in sprinkles.

6. Fill muffin cups ¾ full with batter.

7. Bake 12–14 minutes or until toothpick comes out clean.

8. Cool on wire rack and serve.

Notes

Store in airtight container for 3 days, or freeze for 2 months.
