Ingredients

- 1 cup dried lentils
- 2 medium sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until softened.
- Stir in cumin and paprika, cook for 1 minute.
- Add lentils, sweet potatoes, and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 25-30 minutes.
- Season with salt and pepper before serving.

- Rinse lentils before cooking.
- Adjust broth amount for thicker or thinner consistency.
