Ingredients

- 1 cup couscous
- 1 1/4 cups boiling water or vegetable broth
- 2 tbsp olive oil
- 1 lemon (zested and juiced)
- 1/4 cup chopped fresh parsley
- 2 tbsp chopped fresh mint
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Place couscous in a large bowl.
- Pour boiling water or broth over couscous, cover, and let sit for 5 minutes.
- Fluff couscous with a fork.
- Add olive oil, lemon zest, lemon juice, parsley, mint, salt, and pepper.
- Mix well and serve warm or chilled.

- Use fresh herbs for best flavor.
- Can be served cold as a salad.
- Store leftovers in the fridge for up to 3 days.
