Ingredients

- 1 whole chicken (3–4 lbs)
- 2 lemons, sliced
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
Instructions
- Preheat oven to 375°F (190°C).
- Rub chicken with olive oil, salt, pepper, and thyme.
- Stuff cavity with lemon slices and minced garlic.
- Place chicken in a roasting pan.
- Roast for 1 hour 15 minutes or until internal temperature reaches 165°F.
- Let rest 10 minutes before carving.
