Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the halved baby potatoes with olive oil, lemon zest, lemon juice, minced garlic, salt, and pepper.
- Spread the potatoes evenly on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until golden and tender.
- Remove from the oven and sprinkle with fresh dill before serving.
