Description
A festive twist on stuffed bell peppers, perfect for Halloween. These Jack-o’-Lantern peppers are filled with a savory mixture and baked to perfection.

- 4 large orange bell peppers
- 1 lb ground beef (or turkey for a lighter option)
- 1 cup cooked rice
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 tsp paprika
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds and membranes. Set aside.
- In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
- Add ground beef and cook until browned. Drain excess fat.
- Stir in cooked rice, diced tomatoes, paprika, oregano, salt, and pepper. Cook for 2-3 minutes.
- Spoon the mixture into the prepared bell peppers, filling them to the top.
- Place peppers in a baking dish and bake for 25-30 minutes.
- Sprinkle shredded cheese on top and bake for an additional 5 minutes until cheese is melted.
- Use a small knife to carve Jack-o’-Lantern faces into the peppers before serving.
Notes
- For vegetarian version, substitute ground beef with lentils or quinoa.
- Peppers can be prepared ahead and refrigerated before baking.
