Ingredients

  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 clove garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 8 cups chicken broth
  • 1 cup small pasta (like orzo or ditalini)
  • 2 cups fresh spinach, chopped
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Mix beef, pork, breadcrumbs, Parmesan, egg, garlic, salt, and pepper in a bowl.
  2. Roll the mixture into small meatballs.
  3. Heat olive oil in a pot over medium heat and brown the meatballs.
  4. Add chicken broth and bring to a boil.
  5. Stir in pasta and simmer for 8-10 minutes.
  6. Add spinach and parsley. Cook for 2 more minutes.
  7. Serve hot with extra Parmesan if desired.
