Ingredients

- 1 lb ground beef
- 1/2 lb ground pork
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 clove garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 8 cups chicken broth
- 1 cup small pasta (like orzo or ditalini)
- 2 cups fresh spinach, chopped
- 1/4 cup fresh parsley, chopped
Instructions
- Mix beef, pork, breadcrumbs, Parmesan, egg, garlic, salt, and pepper in a bowl.
- Roll the mixture into small meatballs.
- Heat olive oil in a pot over medium heat and brown the meatballs.
- Add chicken broth and bring to a boil.
- Stir in pasta and simmer for 8-10 minutes.
- Add spinach and parsley. Cook for 2 more minutes.
- Serve hot with extra Parmesan if desired.
Notes
- Use fresh spinach for best flavor.
- You can substitute kale for spinach.
- Meatballs can be made ahead and frozen.
