Ingredients

- 200g Irish bacon, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 medium potatoes, peeled and diced
- 1/2 head cabbage, shredded
- 1 liter chicken or vegetable stock
- 1 tbsp butter
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat butter in a large pot over medium heat.
- Add diced bacon and cook until lightly browned.
- Add chopped onion and minced garlic, sauté until softened.
- Stir in diced potatoes and shredded cabbage.
- Pour in the stock and bring to a boil.
- Reduce heat, cover, and simmer for 20-25 minutes until potatoes are tender.
- Season with salt and pepper.
- Garnish with fresh parsley before serving.

- Use smoked bacon for extra flavor.
- Add a splash of cream for a richer texture.
- Store leftovers in the fridge for up to 3 days.
