Ingredients

- 2 cups carrots, peeled and chopped
- 2 cups parsnips, peeled and chopped
- 2 cups sweet potatoes, peeled and chopped
- 2 tbsp olive oil
- 2 tbsp honey
- 1 tbsp fresh thyme leaves
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss carrots, parsnips, and sweet potatoes with olive oil, honey, thyme, salt, and pepper.
- Spread vegetables evenly on a baking sheet.
- Roast for 30-35 minutes, stirring halfway, until tender and caramelized.
- Serve warm.
