Ingredients

- 2 parsnips, peeled and chopped
- 1 large sweet potato, peeled and chopped
- 1 red onion, quartered
- 2 tbsp olive oil
- 2 tbsp honey
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
Instructions
- Preheat oven to 400°F (200°C).
- Toss all chopped vegetables in olive oil, honey, salt, pepper, and thyme.
- Spread evenly on a baking sheet.
- Roast for 30-35 minutes, stirring halfway, until tender and caramelized.
- Serve warm.
