Description
Soft, fruity cupcakes made with honey, peach puree, and cream cheese both in the batter and frosting.
Ingredients
1 ½ cups all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon salt
½ cup unsalted butter, softened
8 oz cream cheese, softened
¾ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
½ cup honey
½ cup canned peach puree
Frosting:
8 oz cream cheese, softened
¼ cup butter
2 cups powdered sugar
2 tbsp honey
½ tsp vanilla extract
2 tbsp peach puree (optional)
Instructions
1. Preheat oven to 350°F (175°C) and line a muffin tin.
2. Cream butter, cream cheese, and sugar until fluffy.
3. Beat in eggs one at a time, then vanilla, honey, and peach puree.
4. In a separate bowl, whisk flour, baking powder, and salt.
5. Gradually mix dry into wet until combined.
6. Scoop into cupcake liners and bake 18–22 minutes.
7. Cool completely on wire rack.
8. Beat frosting ingredients together until smooth.
9. Pipe or spread frosting on cooled cupcakes.
10. Garnish with peach slices and drizzle with honey.
Notes
Use fresh or canned peach puree.
Frosting can be made ahead and chilled.
Store cupcakes in fridge for up to 4 days.
