- 1 cup canned pumpkin puree
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 4 oz cream cheese, softened
- 1 tbsp powdered sugar
Instructions
- Preheat oven to 375°F and line a muffin tin with liners.
- Whisk flour, baking soda, salt, and pumpkin pie spice in a bowl.
- Mix pumpkin puree, sugars, oil, eggs, and vanilla in another bowl.
- Combine wet and dry ingredients until just mixed.
- Beat cream cheese and powdered sugar until smooth.
- Fill muffin cups halfway with batter, add a spoonful of cream cheese mixture, then top with more batter.
- Bake for 18-22 minutes or until a toothpick comes out clean.
- Cool before serving.
