Ingredients

  • 1 1/2 cups warm water (110°F)
  • 1 tbsp sugar
  • 2 tsp salt
  • 1 package active dry yeast
  • 4 1/2 cups all-purpose flour
  • 2 tbsp unsalted butter, melted
  • 10 cups water
  • 2/3 cup baking soda
  • 1 egg yolk, beaten
  • coarse salt, for topping

Instructions

  1. Mix warm water, sugar, and salt in a bowl. Sprinkle yeast on top and let sit for 5 minutes until foamy.
  2. Stir in flour and melted butter until dough forms. Knead for 5 minutes until smooth.
  3. Cover dough and let rise for 1 hour until doubled in size.
  4. Preheat oven to 450°F. Bring 10 cups of water and baking soda to a boil in a large pot.
  5. Divide dough into 8 pieces. Roll each into a rope and twist into pretzel shape.
  6. Boil each pretzel for 30 seconds, then place on a baking sheet.
  7. Brush with beaten egg yolk and sprinkle with coarse salt.
  8. Bake for 12-15 minutes until golden brown.
