Description

A simple and flavorful herbed roast chicken served with creamy cauliflower mash.


Ingredients

Scale
  • 1 whole chicken (about 4 lbs)
  • 2 tbsp olive oil
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 head cauliflower, cut into florets
  • 2 tbsp butter
  • 1/4 cup milk
  • 1/2 tsp garlic powder

Instructions

  1. Preheat oven to 375°F.
  2. Rub chicken with olive oil and season with rosemary, thyme, salt, and pepper.
  3. Place chicken in roasting pan and roast for 1 hour 15 minutes or until internal temperature reaches 165°F.
  4. While chicken roasts, steam cauliflower florets until tender.
  5. Mash cauliflower with butter, milk, and garlic powder until smooth.
  6. Let chicken rest 10 minutes before carving.
  7. Serve chicken with cauliflower mash.
