Description
A simple and flavorful herbed roast chicken served with creamy cauliflower mash.
Ingredients

- 1 whole chicken (about 4 lbs)
- 2 tbsp olive oil
- 1 tbsp chopped fresh rosemary
- 1 tbsp chopped fresh thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1 head cauliflower, cut into florets
- 2 tbsp butter
- 1/4 cup milk
- 1/2 tsp garlic powder
Instructions
- Preheat oven to 375°F.
- Rub chicken with olive oil and season with rosemary, thyme, salt, and pepper.
- Place chicken in roasting pan and roast for 1 hour 15 minutes or until internal temperature reaches 165°F.
- While chicken roasts, steam cauliflower florets until tender.
- Mash cauliflower with butter, milk, and garlic powder until smooth.
- Let chicken rest 10 minutes before carving.
- Serve chicken with cauliflower mash.
