- 2 tbsp olive oil
- 1 tbsp chopped fresh rosemary
- 1 tbsp chopped fresh thyme
- 1 tbsp chopped fresh parsley
- 1 tsp salt
- 1/2 tsp black pepper
- 1 lemon, halved
- 4 garlic cloves, crushed
Instructions
- Preheat your oven to 375°F (190°C).
- Rinse the chicken and pat it dry with paper towels.
- Rub the chicken with olive oil.
- Mix the herbs, salt, and pepper in a small bowl.
- Sprinkle the herb mixture evenly over the chicken.
- Place the lemon halves and garlic inside the chicken cavity.
- Roast the chicken for 90 minutes or until the internal temperature reaches 165°F (74°C).
- Remove from the oven and let it rest for 10 minutes before carving.
