Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup rolled oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup pumpkin puree
  • 1/4 cup maple syrup
  • 1/4 cup almond milk
  • 1 egg
  • 1 tsp vanilla extract
  • 2 tbsp coconut oil, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a bowl, mix flour, oats, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk pumpkin puree, maple syrup, almond milk, egg, vanilla, and coconut oil.
  4. Combine wet and dry ingredients. Stir until just mixed.
  5. Divide batter evenly into 12 muffin cups.
  6. Bake for 18–20 minutes or until a toothpick comes out clean.
  7. Let cool before serving.

Notes

  • Use pure pumpkin puree, not pumpkin pie filling.
  • Replace almond milk with any milk of choice.
  • Store in an airtight container for up to 3 days.
