- 1 tbsp olive oil
- 1 lb ground turkey or chicken
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 cup corn kernels
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 1 cup shredded cheese
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add ground turkey or chicken and cook until browned, about 5 minutes.
- Stir in onion, bell pepper, and garlic. Cook for 3-4 minutes until softened.
- Add black beans, diced tomatoes, corn, chili powder, cumin, paprika, and salt. Stir well.
- Simmer for 10 minutes, stirring occasionally.
- Sprinkle shredded cheese on top and cover until melted, about 2 minutes.
- Garnish with fresh cilantro before serving.
Notes
- Use ground beef or plant-based meat as a substitute.
- Add jalapeños for extra heat.
- Serve with tortilla chips or rice.
