Description

Ingredients

  • 1 tbsp olive oil
  • 1 lb ground turkey or chicken
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup corn kernels
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1 cup shredded cheese
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground turkey or chicken and cook until browned, about 5 minutes.
  3. Stir in onion, bell pepper, and garlic. Cook for 3-4 minutes until softened.
  4. Add black beans, diced tomatoes, corn, chili powder, cumin, paprika, and salt. Stir well.
  5. Simmer for 10 minutes, stirring occasionally.
  6. Sprinkle shredded cheese on top and cover until melted, about 2 minutes.
  7. Garnish with fresh cilantro before serving.

Notes

  • Use ground beef or plant-based meat as a substitute.
  • Add jalapeños for extra heat.
