Ingredients

  • 1 lb carrots, peeled and halved lengthwise
  • 2 tbsp olive oil
  • 1 tbsp harissa paste
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 clove garlic, minced
  • 1 tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss carrots with olive oil, harissa, honey, salt, and pepper.
  3. Spread carrots on a baking sheet and roast for 25 minutes.
  4. Mix yogurt, lemon juice, lemon zest, and garlic in a bowl.
  5. Serve roasted carrots with lemon yogurt and garnish with parsley.
