Ingredients

- 1 lb carrots, peeled and halved lengthwise
- 2 tbsp olive oil
- 1 tbsp harissa paste
- 1 tsp honey
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup Greek yogurt
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1 clove garlic, minced
- 1 tbsp chopped fresh parsley
Instructions
- Preheat oven to 400°F (200°C).
- Toss carrots with olive oil, harissa, honey, salt, and pepper.
- Spread carrots on a baking sheet and roast for 25 minutes.
- Mix yogurt, lemon juice, lemon zest, and garlic in a bowl.
- Serve roasted carrots with lemon yogurt and garnish with parsley.
Notes
- Adjust harissa for more or less spice.
- Use dairy-free yogurt for a vegan version.
- Store leftovers in an airtight container for up to 3 days.
