- 2 medium potatoes, diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/4 tsp dried thyme
- 1/4 cup water or broth
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onions and garlic, sauté for 2 minutes.
- Add ground turkey, breaking it apart with a spoon. Cook until browned.
- Stir in diced potatoes and seasonings.
- Add water or broth, cover, and simmer for 15 minutes or until potatoes are tender.
- Remove the lid and cook for 2-3 more minutes to crisp the potatoes slightly.
- Serve hot.
