Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup kalamata olives, sliced
  • 1/4 cup crumbled feta cheese
  • 1 tbsp lemon juice
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken with oregano, garlic powder, salt, and pepper.
  3. Cook chicken for 6-7 minutes per side until golden and cooked through.
  4. Remove chicken and set aside.
  5. Add cherry tomatoes and olives to the skillet, cook for 2 minutes.
  6. Slice chicken and return to the skillet.
  7. Sprinkle feta cheese and drizzle lemon juice.
  8. Garnish with fresh parsley before serving.

Notes

  • Use boneless thighs if preferred.
