Description
A comforting bowl of Grandma’s Homestyle Chicken Noodle Soup made from scratch. This classic recipe features tender chicken, hearty vegetables, and homemade noodles in a rich broth.

- 1 whole chicken (about 4 lbs)
- 8 cups water
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 2 bay leaves
- 2 cups egg noodles
- 2 tbsp fresh parsley, chopped
Instructions
- Place chicken in a large pot with water. Bring to a boil, then reduce heat and simmer for 1 hour.
- Remove chicken from broth and let cool. Strain broth and return to pot.
- Add carrots, celery, onion, garlic, salt, pepper, and bay leaves to the broth. Simmer for 20 minutes.
- While vegetables cook, shred the chicken meat, discarding skin and bones.
- Add shredded chicken and noodles to the pot. Cook for 8-10 minutes until noodles are tender.
- Remove bay leaves. Stir in parsley before serving.
Notes
- For richer flavor, roast chicken bones before making broth
- Add thyme or rosemary for extra aroma
- Freezes well for up to 3 months
