Sticky, sweet, and savory, these glazed apricot chicken thighs come together in just 30 minutes using pantry staples like apricot preserves, soy sauce, garlic, and ginger.
Ingredients
2 lbs boneless, skinless chicken thighs
1 tsp garlic powder
1 tsp smoked paprika
1 tsp kosher salt
½ tsp ground black pepper
1 tbsp vegetable oil
1 cup apricot preserves
2 tsp grated ginger
2 cloves garlic, minced
¼ cup soy sauce
1 tbsp honey
Sliced green onions for garnish
Instructions
1. Preheat oven to 375°F. Pat chicken dry and season both sides with garlic powder, paprika, salt, and pepper.
2. Heat oil in a skillet over medium-high heat. Sear chicken thighs 3–4 minutes per side until golden.
3. In a saucepan, combine apricot preserves, soy sauce, ginger, garlic, and honey. Simmer until thickened.
4. Transfer seared chicken to a baking dish and pour glaze on top.
5. Bake uncovered for 20–25 minutes until chicken is cooked through and glaze is caramelized.
6. Garnish with green onions and serve hot.
Notes
Use bone-in chicken thighs if preferred; just extend baking time by 10–15 minutes.
This dish pairs well with rice, roasted veggies, or couscous.
Freeze leftovers for up to 2 months in an airtight container.
