Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup molasses
  • 1 cup hot water

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a bowl, whisk together flour, baking soda, salt, ginger, cinnamon, and cloves.
  3. In another bowl, beat butter and sugar until light and fluffy. Add the egg and molasses, mixing well.
  4. Alternately add the dry ingredients and hot water to the butter mixture, starting and ending with the dry ingredients.
  5. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick comes out clean.
  6. Let the loaf cool in the pan for 10 minutes before transferring to a wire rack.

Notes

  • Store in an airtight container for up to 5 days.
  • For extra flavor, add 1/2 cup chopped crystallized ginger to the batter.
  • Serve warm with butter or cream cheese frosting.
