Description
Garlic Butter Beef Bites & Potatoes is a one-pan dinner with tender beef, crispy potatoes, and a buttery garlic herb sauce. Easy, quick, and perfect for weeknights.
Ingredients
1.5 pounds Beef stew meat – cut into bite-sized pieces
1 pound Baby potatoes – halved
4 tablespoons Unsalted butter – melted
3 cloves Garlic – minced
1 teaspoon Onion powder
1 teaspoon Smoked paprika
0.5 teaspoon Dried thyme
0.5 teaspoon Dried rosemary
0.5 teaspoon Salt
0.25 teaspoon Black pepper
0.25 cup Beef broth
1 tablespoon Olive oil
Instructions
1. Preheat oven to 425°F. Toss baby potatoes with olive oil, salt, and pepper. Roast for 20–25 minutes until golden.
2. Meanwhile, heat a skillet over medium-high heat. Sear beef cubes in batches until browned. Set aside.
3. In the same skillet, reduce heat and melt butter. Add garlic and stir for 30 seconds.
4. Add onion powder, paprika, thyme, and rosemary. Stir well.
5. Pour in beef broth to deglaze pan. Scrape up flavorful bits.
6. Return beef and potatoes to skillet. Toss to coat in garlic butter sauce.
7. Simmer for 2–3 minutes until sauce thickens slightly.
8. Serve hot, garnished with chopped parsley if desired.
Notes
Let beef reach room temp before searing for better browning.
Avoid overcrowding the pan when searing meat.
Add extra butter at the end for a richer finish.
